Recipe: Best Cookies Ever

My mother in-law always has these cookies ready for us when we come home. She makes the batch ahead of time and then freezes the dough. When company arrives, she just takes out the dough, thaws it out, and presto–fresh cookies are baked upon our arrival. I’m getting smarter out at the lake. This is my kind of cookie. The recipe below makes 9 dozen! And they are so tasty–like gourmet! (This recipe by the way is from the urban legend about the $250 Neiman Marcus Cookie.)

Ingredients:
2 c. butter
2 c. granulated sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla
4 c. flour
5 c. blended oatmeal
1 tsp. salt
2 tsp. baking powder
2 tsp. baking soda
24 oz. chocolate chips (2 lg. bags)
1 (8 oz.) Hershey bar, grated (yes, this is really 1/2 lb.)
3 c. chopped nuts (optional)

First blend the oatmeal into a fine powder. Next grate that 8 oz of chocolate! Next, cream butter and both sugars. Add eggs and vanilla. Mix together with flour, oatmeal, salt, baking powder and baking soda. Add grated chocolate, chocolate chips, and nuts. Roll into 1 inch balls and place two inches apart on cookie sheet. Bake for 12 minutes at 375°F. Makes 9 dozen cookies!

The best part about making this cookies was making them with my god-daughter, Elle!
